This Is Salad
When #sukisays eat salad, I’m picturing this. For one person. This is a meal!
I’m not picturing a couple of quartered tomatoes with a slice of cucumber. Or ready-made pasta ‘salads’, with cheese or grilled flesh. We’re talking a base of greens with herbs and chopped/grated/sliced/spiralized veggies, some great vegetable fats (avocado and olives), tasty crunchy bits (seeds, not croutons or bacon) some seaweed, and a light tasty dressing. Add some spirulina and sauerkraut too! Throw on a handful of baked, steamed or roasted beets or sweet potatoes for further grounding. Yum
